Cherry Muffins

½   cup margarine
1    cup sugar
1    teaspoon vanilla
add 3 eggs and beat
½   cup matzah cake meal
¼   cup potato starch
½   teaspoon salt
1    can pitted cherries, drained

Preheat oven to 350 degrees. Combine wet ingredients and dry ingredients separately.  Add the wet ingredients to the dry, and combine thoroughly.  Add cherries. Pour batter into lined muffin tins.  Bake for 45 minutes.

Chef’s tip : Try this recipe with sun-dried cherries or cranberries.

    love your website. just wondering would it be possible (as if you didn’t already have your hands full!) to state whether the recipe freezes well at the end of the recipes, especially pesachdik ones? it helps so much in figuring when to make these delicious recipes!

    Yes they freeze well and are great with any fruit

    I have made these in 3 different versions regular chocolate chip, blueberry and a double chocolate where you substitute the potato starch for cocoa. The latter are amazing!! Can’t wait to see people’s reaction because they taste too good to be true!
