Romaine Salad with Mandarin Oranges and Avocado

1 salad for 7 people, enough dressing for 3 salads

This dressing recipe is generous enough for 3 salads. I like to make extra dressing so that I can use it for other Yom Tov days.
5 cups romaine lettuce
½ cup mandarin oranges, drained
1 avocado, cut into pieces
½ cup sliced cucumber
½ cup toasted nuts

Citrus dressing:
1 small shallot, finely chopped
3/4 cup olive oil
1/4 cup white or red wine vinegar
3 tablespoons fresh lemon juice
2 tablespoons fresh orange juice
1/4 teaspoon finely grated lemon zest
Kosher salt, freshly ground pepper

Combine first 6 ingredients in a small jar; season vinaigrette to taste with salt and pepper. Shake to blend. DO AHEAD: Vinaigrette can be made 1 week ahead. Cover and chill. Shake before using.

Mix romaine, oranges, avocados, cucumbers and nuts. Toss in the dressing and serve.
